New Flavours at Three Cats!

Three Cats is bringing something new to the market this week with three delicious additions—eggplant and tomato pickle, spiced apricot jam, and fresh ginger chutney! As always, their preserves, sauces, and pickles are made with the best locally grown produce. Stop by to stock up on your favourites and try something new!

This is one of my favourite ways to have corn it is a recipe from Ainsley Harriott. I actually simplify it by just mixing up the butter, saute the chillies, then add onions and juice plus S/P

Grilled Corn Cob with Chilli Onion Dressing

Sweetcorn is especially good when cooked in their husks on a barbecue. They become really tender because they almost steam in their own juices. The trick is to soak them in cold water for at least 1 hour beforehand so that the husks don’t catch fire during cooking. They’re flaming lovely!

Serves 4-6

  • 4-6 ears of sweetcorn in their husks
  • 175g (6 oz) butter
  • 4 teaspoons chilli oil (or more if you dare)
  • 4 green chillies, seeded and very finely chopped
  • 4 spring onions, trimmed and thinly sliced
  • 2 teaspoons lemon or lime juice
  • Salt and freshly ground black pepper
  • Crusty bread, to serve

Method

  1. Soak the sweetcorn in cold water for at least 1 hour.
  2. Remove the corn from the water, drain away the excess and cook under a medium-hot grill (at least 6 inches away from direct heat) or barbecue over medium-hot coals for 30 minutes, turning every now and then.
  3. Meanwhile, put the butter into a pan and leave over low heat until melted. Spoon any scum off the surface and then pour the clear butter into a bowl, leaving behind the milky white liquid.
  4. Just before the sweetcorn is ready, heat the chilli oil in a small clean pan, add the green chillies, and fry for 1 minute. Remove from the heat and add the clarified butter, spring onions, lemon or lime juice, and plenty of seasoning.
  5. Pull away the browned husks from the outside of the corn, transfer the ears to plates, and spoon over the warm dressing. Eat with plenty of crusty bread to mop up all the juices.
