Lynn is sharing another one of her favourites.
At this time of year t’s hard to resist the flavoursome, unbruised and tree ripened fruit from the Marlborough Farmers' Market stallholders, incomparable to commercial produce trucked from distribution warehouses around the country.
This Custard Tart is very easy to make, and you can use the fruit that you just didn’t get around to eat before having to buy more.
Ingredients:
11/2 C flour
1 C sugar
1 C coconut
50g melted butter
2 C milk
4 eggs
fruit on top
Mix everything together well, and pour into your tart dish, place any fruit on top, this one has strawberries, a nectarine and some plums.
Cook at 180°C until it is firm.
You can dust it with icing sugar to present. Great for every night dinners, looks good enough for a dinner party, even a picnic.
