The recipe of the week is brought to us via Leah from Mississippi Herbs, who spotted it on the Country Trading Co.
Leah sells zucchini, tomatoes and chillies along with an array of herb plants and cut herbs for culinary uses.
Flourless zucchini wraps for a new inspirational way to use zucchini (courgettes) and you can fill them however you choose.
The author suggests hummus or guacamole base, layered with chopped cucumber, picked beans, coriander, spring onions, tomatoes, crumbled feta, spicy stir-fried beef or chicken strips.
INGREDIENTS:
500 g (1 lb) grated courgettes (zucchini)
50 g (1 3/4 oz) grated parmesan cheese
25 g (3/4 oz) breadcrumbs
2 eggs
salt and pepper
1 teaspoon spice (optional) of your choosing – Nigella seeds are great, so are cumin or chilli for a bit of a kick
